I love mushrooms, well, most of them. I live in the land of mushrooms--shiitake, maitake, and so many more I can't remember. But there's a couple over here I can't eat, and shiitake is one of them, the flavor is way too strong and I'm stuck with shiitake burps the rest of the day. Another one I don't know the name for, is really slimy, it's like eating a slug or something.
But in general, I love mushrooms, esp. sauteed with some yummy fat butter and a bit of salt and pepper or soy-sauce thrown in, a bit of wine at the end, and then drop them on top of my rice! If you get mirin, which is a sort of sweet rice-vinegar stuff, you add a few drops to the sautee, it's pretty good.
